Well, when you can hear and subsequently transcribe multi-layered pieces like me. How does one go about developing that exactly?

Well, you would assuredly want to combine your ability to hear that depth of harmony with ear training and transcription practice.

Some good tools are MusicTheory.net and, if you have an iPad, the http://www.musicopoulos.com apps are great for music theory and ear training.

You'd want to combine whatever depth of aural aptitude you have with good training. It should both focus and improve your listening and notation skills.

Good luck!
